Boring name, but a pretty great dish for experimenting with cooked summer squash!
ingredients
2-1/2 to 3 lbs. summer squash (thin yellow rinds)
1 lb. ground beef
1 T. oil
1/4 c. mayo
1/3 c. Italian-seasoned breadcrumbs
1 egg, beaten
1/2 c. mushrooms, finely chopped
1/4 c. purple onions, finely chopped
1 T. + 2 t. seasoned salt
1 t. garlic powder
1/2 c. finely-chopped black olives (canned are preferable, for this)
directions
1. Shred and boil the squash for about 10 minutes. Drain and cool to room temperature.
2. Sautée the beef with the vegetables and seasonings. Cool to room temperature.
3. Mix everything together except the olives, and put in a 8x12 oblong casserole dish.
4. Top with the chopped olives.
5. Bake for 1 hour at 350 degrees.
