6tbls butter,6 tbls flour,1cup chicken stock,1cup heavy cream, 1 tbl sherry,white pepper to taste
directions
Melt butter,whisk in flour, cook a few minutes until completely combined. Gradually stir in broth & simmer, stir until thickened. Blend in cream, then add sherry. Season to taste. Serve immediatly over chicken, fish or eggs
