description

Light substitute for a holiday Dessert

ingredients

Filling:
1 1/2 C canned or cooked pumpkin
1/2 cup brown sugar packed
1/2 tsp. salt
1 tsp Cinnamon
1/4 tsp Ginger
1/8 tsp. ground cloves
1/2 Quart Vanilla Ice cream softened

Crust:
1 1/2 C Gram Crackers Crushed Plus 2 Tbs.
1/4 C Butter
1/4 C sugar

directions

Crust:
Blend 1 1/2 C gram crackers with butter and sugar till moist and press into the bottom of a 4 x 4 baking dish. Bake at 350 for 10-12 Min till dry. Cool.

Filling: Combine all ingredients and pour over cooled crust. Sprinkle with remaining gram crackers. Freeze overnight covered. Cut into squares and serve frozen.

* Can substitute cooked spaghetti squash for pumpkin
