ingredients

  • 2 lbs boneless, skinless chicken breast
  • 3 lg tomatoes on a vine
  • 1 red onion
  • 2 red bell peppers
  • 3 jalapenos, seeded
  • 5 garlic cloves
  • 2 Tbsp cilantro
  • 2 tsp cumin
  • 1 1/2 tsp chili powder
  • Salt

directions

  1. Dice all the veggies and combine them in a mixing bowl.
  2. Add salt, chili powder and cumin and mix everything well.
  3. Spread half of the veggie mixture in the bottom of the crock pot.
  4. Layer chicken breasts on top of the veggies.
  5. Spread remaining veggie mixture on top of chicken.
  6. Close the crock pot and cook on HIGH for 4-5 hours.
  7. Take the chicken out once it's cooked and shred it using two forks.
  8. Strain veggies from the juices (you can save the juice from cooking chicken and veggies to make soup) and add veggies to the chicken. Mix well.
