Delicious with Pork Chops & Corn Bread.

ingredients

  • 16-Cups,Collard Greens.
  • 2- Smoked Ham Hocks.
  • 6- Slices of Thick Bacon.
  • 8- Cups,Chicken Stock.
  • 1- Cup,Minced Onion. (Optional)
  • 2- TSP Salt.
  • 1- TSP Black Pepper.

directions

  • Remove thick stems from Collard Greens and wash 4 or 5 times.
  • Cut Bacon into little bits, then cook in a skillet until the fat turns translucent in color.
  • Place Bacon with some of the drippings into the bottom of Crock Pot.
  • Add half the Greens,salt & pepper, and Ham Hocks.
  • Add the rest of the Greens & Chicken Stock to Crock Pot. (I add more Salt & Pepper on top of the Greens. You can use Your own judgement.)
  • Cover and cook on High for 4 or 5 hours.
  • Remove Ham Hocks, discard skin and shred meat and return to Crock Pot.
  • Serve Greens with Minced Onion and Tabasco Sauce
