A rich, hearty beef stew. For best results, finish on stove with dumplings!)

ingredients

  • 1-2 lbs stewing beef
  • 6-7 medium potatoes
  • 2-3 ribs of celery, cut into pieces (optional)
  • Short cut carrots or sliced carrots to taste (I use about 3/4 of a pack)
  • 1 medium onion
  • 1 packet onion soup
  • At least one quart of beef broth and water (I use about 1 or more quarts of water since the soup provides some beef flavor.)

  • Peel and chop potatoes and other vegetables.
  • If desired, brown the beef in a pan and add to the crock pot, though this is not necessary.
  • Add all ingredients to the pot and cook.
  • I said 120 minutes because it was the longest cook time I could get, but it's more like 4 hours on high or 6-8 on low.

  • When all ingredients are done, transfer back to the stock pot (the one you used to brown the beef) and cook dumplings according to package on the biscuit mix.
  • The dumplings will thicken the broth. It's like magic!
  • This takes about 20 minutes. Make SURE the other soup ingredients are in the pot, or the dumplings will sink to the bottom rather than float on the top.) If you skip this step, your food will be yummy but will taste like beef soup, not stew. Now separate the dumplings from the stew and serve the stew over the dumplings. Yummo!
