1 large onion, sliced thin
3 cups buttermilk
2 cups flour
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
vegetable oil for frying.

directions

Separate the onions into rings and place in a spacious bowl. Cover with the buttermilk, making sure that the onions are submerged.

Marinate for one hour; turning once after 30 minutes.

Combine the flour, salt, pepper and cayenne pepper in a spacious bowl.

Pour 2-3-inches of oil in a heavy-bottomed pan and heat to 375 degrees.

While the oil is heating, remove the onions from the buttermilk and shake to remove excess liquid.

Toss the onion slices in the flour mixture and shake to remove excess.

Working in batches, fry the onions until golden. Remove with a slotted spoon and place on the baking sheet lined with paper towels to absorb excess grease.

Salt if desired; serve hot and fresh.
