Cilantro Lime Fish Tacos

Light, Fresh and Delicious

ingredients

  • 1 clove crushed garlic 
  • 4 Tbsp olive oil
  • splash of soy sauce
  • juice of 1 lime*
  • 1 tsp chili powder*
  • 1/2 tsp cumin*
  • 3 Tbsp mayo 
  • 2 tbsp chopped cilantro
  • 8 small flour tortillas
  • 16 oz Tilapia
  • 2 small tomatoes chopped
  • 2 cups lettuce shredded

*can be increased according to taste

directions

  • Mix garlic, olive oil, soy sauce, 1/2 tsp chili powder, cumin and the juice of half of a lime
  • Marinate 2 Tilapia fillets in the marinade for 30 min - 1 hour
  • In a separate bowl mix mayo, 1/2 tsp chili power and half a lime
  • Grill fish or steam fish until flaky, adding salt and pepper to taste while cooking
  • Warm flour tortillas, add chopped lettuce, chopped tomatoes and cooked fish
  • Top with lime mayo and fresh cilantro, and a final squeeze of lime juice.

*Makes approximately 8 tacos
