ingredients

2 or 3 boneless skinless chicken breast halves
1 cucumber
1 small red onion
8 ounces low-fat cream cheese, softened to room temperature
Sandwich bread
Salt and pepper

directions

Cook the chicken breast in the microwave or in a skillet with an inch of water until cooked through. Slice thinly. Peel the cucumber and slice thinly. Peel and thinly slice red onion — you'll need just a few rings. Spread cream cheese on 4 pieces of sandwich bread. Top with slices of cucumber and 2 or 3 rings of red onion. Sprinkle with salt and pepper. Fill the bread with slices of chicken, then top with more bread slices.

Makes 4 sandwiches, with some leftover vegetables.
