ingredients
2 medium tomatoes, cut in wedges
2 large cucumber, sliced
2 cups water
1 cup cider vinegar
3 packets stevia or other sugar substitute
2 teaspoons salt
1/4 teaspoon pepper
directions
In large bowl, combine the tomatoes and cucumbers. In a small bowl, combine remaining ingredients. Pour vinegar mixture over cucumber and tomatoes. Toss to coat. Refrigerate for several hours until chilled.
