A healthy "Pasta" dish
ingredients
- 1 chicken breast
- 1 small tomato,
- 1/2 white onion (chopped long and chunky for crunch)
- 1/2 cup of mushrooms
- 1/3 cup of balsamic vinaigrette.
- 1 - 2 Zucchini (depending on size - enough for a good portion of "pasta"
- Salt, Pepper and Garlic powder to taste
directions
- Saute all ingredients except for Zucchini in a wok or frying pan with a little bit of cooking spray (or oil if you want a little more flavor) for about 20 minutes
- While ingredients are cooking, use a potato peeler to shred the zucchini - you want to shred all the way til you get to the seeded part.
- At the end of the 20 minutes add the Zucchini and cook for another 3 minutes and serve
