ingredients
- 2 red bell peppers
- 2 green bell peppers
- 1 jalapeno or 2 chipotle peppers (optional - just for more kick)
- 1/2 red onion
- 2 cups frozen corn
- 2 teaspoons chili powder
- 2 teaspoon cumin
- salt to taste
- 2 cups Mexican cheese
- 18-20 corn tortillas
- 1 can refried beans
- 2 cups red enchilada sauce
- cilantro, guacamole, or sour cream for topping
directions
- Slice up all your Vegetables
- In the skillet, over High Heat, add the Onions and Peppers. Sprinkle with Chili Powder and Cumin, and stir until browned. Set aside
- Do the exact same thing in step 2 with the Corn, set aside
- Preheat your oven to 400 degrees and cut your Tortillas into strips
- Spread a little of the Enchilada sauce into the bottom of a Greased baking Pan
- Layer (in this order): 1/2 the Tortilla Strips, ALL of the Re-fried Beans, 1/2 the Veggies, 1/2 the Enchilada Sauce, 1/2 the Cheese, then cover with the other half of the Tortillas, Veggies, Sauce and Cheese
- Cover with foil and bake for 15-20 minutes until the cheese has melted.
- Top with Sour Cream, Guacamole, etc... :)
