So simple, and they just look so good :)

ingredients

1/2 red or green pepper, seeded and cut into strips
1/2 onion, thinly sliced
2 tsp Vegetable oil
1/2 cup Monterey Jack Cheese
2 sliced tomatoes, cubed
cilantro
4 tortillas

Optional
Sour Cream
Chicken (or any meat)
squeeze of lime
taco seasoning

directions

In a large skillet cook your sweet peppers and onions in hot oil over medium heat for about 5 minutes. (with whatever seasonings you like) Then remove.

Lightly coat ONE side of each tortilla with cooking spray. On the UNcoated side of the tortillas divide up the cheese and cooked veggies. (cooked meat too if you want) Top with tomato slices, cilantro and the remaining cheese. Then put the other two tortillas on top - coated side up.

Cook the Quesadillas in a skillet over medium heat for 5 minutes on each side, until the cheese melts and tortillas are lightly browned. Cut into quarters and enjoy.
