Pickle Fried Chicken

Put this on a bun... it's almost like people JUST figured this out! lol - fry it however you like

ingredients

  • 4 chicken breasts, cut in half lengthwise
  • 2 cups dill pickle juice (I just used the juice from my pickle jar in the fridge)
  • 1 1/2 cups seasoned breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 large eggs, beaten
  • Pickle slices for garnish, optional

directions

  1. In a ziplock bag, marinate chicken breasts in dill pickle juice for at least 4 hours.
  2. Preheat air fryer at 400º Fahrenheit for 5 minutes.
  3. To make breading, combine breadcrumbs, salt, and pepper.
  4. Dredge chicken in beaten eggs and then cover in breading.
  5. Place breaded chicken in a greased air fryer basket.
  6. Spritz top of chicken with olive oil.
  7. Air fry at 400º Fahrenheit for 8 minutes.
  8. Flip, spritz with olive oil and air fry for 6-8 minutes or until internal temperature reaches 165º Fahrenheit.
  9. Garnish with a couple pickle slices and serve.
