More Oven Fried Chicken

ingredients

  • 1 large chicken breast , boneless and skinless
  • 1 cup skim milk
  • 2 cloves of garlic
  • 1 pinch of sea salt ( coarse )
  • black pepper, freshly ground
  • 200 grams (7-8oz) breadcrumbs
  • 1 teaspoon paprika ( recommendation : smoked paprika )
  • 1 teaspoon dried oregano
  • 1 teaspoon chili flakes (only if you like spicy)
  • 1 teaspoon dried parsley
  • 1 teaspoon olive oil
  • parmesan

directions

  1. Cut chicken breasts in half lengthwise. Beat lightly with a meat mallet schnitzel ( cover it with cling film to not splash ) .
  2. Put the milk in a deep dish and add the pressed garlic , salt and freshly ground pepper .
  3. Place chicken in milk and let it marinate for 2 hours.
  4. In a shallow dish , place the breadcrumbs mixed with paprika, parsley, oregano , salt and pepper.
  5. Dip the marinated chicken in breadcrumbs.
  6. If you want a crispy coating , let the chicken cool a few minutes to allow the bread crumbs to catch well .
  7. Put the chicken in a baking pan and sprinkle with a little olive oil.
  8. Heavy Heat in the oven 400F (200 degrees C) for 10 minutes . 
  9. Flip the Chicken until the other side is nice and brown (about another 8-10 minutes)

Where does the parm cheese go? Made this other night and it wasn't bad. Not very crispy, decent taste though.
