ingredients
1 lb. of leftover roast beef and/or chicken, shredded (or 1 lb. shredded cooked chicken breasts)
1/4 c. canola oil
1 T. lime juice
1 T. Mexican seasoning or blend of spices of your choosing (like chili powder, dried garlic, cilantro, salt)
directions
This recipe makes the basic fajita meat. Marinate all day in the oil, lime juice, and seasonings, then serve with shredded lettuce, chopped tomato, shredded cheese, chopped black olives, and guacamole, if desired. Mix together and eat like a salad.
