Easy Pesto Chicken

The "Pesto" is kind of optional... this is the best way to cook ANY type of "sauced chicken"

ingredients

  • 3 - 4 large boneless chicken breasts or ~ 11/2-2 lb (I had 1.8 lb/815g)
  • 1/4 cup or 55g store-bought or homemade basil pesto
  • 2-3 Tbsp. lemon juice
  • Salt and pepper to taste

directions

  1. Place chicken in an ovenproof baking dish. Add the pesto, lemon juice, season with salt and pepper.
  2. Massage the pesto sauce evenly on each chicken breast on both sides.
    Optional: 1. Let the chicken marinate for about 15 minutes at room temperature (while preheating your oven).
    2. Cover the dish with plastic wrap and put it in the fridge if decided to marinate the chicken breast for more than 30 minutes up to overnight.
  3. Preheat the oven to 425°F.
  4. Bake the chicken for about 20 to 25 minutes until it’s no longer pink inside or reaches an internal temperature of 165°F.
  5. Remove the chicken from the oven and let it rest in the baking dish for 7-10 minutes (this lets the chicken absorb some of the juices).
  6. Serve with pesto cooking liquid if desired and enjoy!
