Chicken and Feta Sauce

ingredients

  • 4 boneless, skinless chicken breasts
  • Olive oil
  • Salt
  • Pepper
  • 1 tablespoon butter
  • 4 teaspoons all-purpose flour
  • 1 12-ounce can evaporated milk
  • 2-3 tablespoons fresh chives, chopped
  • 1 cup feta cheese

directions

  1. Heat skillet over medium-high heat. Lightly coat chicken breasts with olive oil. Sprinkle with salt and pepper.
  2. Add chicken to pan when hot. Cook 4-5 minutes per side or until cooked through. Remove from heat and keep warm.
  3. Melt butter in a saucepan over medium heat. Add flour and whisk constantly for one minute. Gradually add milk, stirring constantly. Stir in chives and reduce heat to medium-low. Simmer 5-7 minutes or until thick, stirring occasionally. Add cheese and stir until cheese is melted.
  4. Spoon sauce over chicken.
