Hungarian Crockpot Goulash

ingredients

1½ lbs. beef stew meat
2 medium carrots, bias-sliced into ½ inch pieces
2 medium onions, thinly sliced
3 cloves garlic, minced
1¼ cups beef broth
1 6oz. can tomato paste
1 tbsp sweet or hot Hungarian paprika
1 tsp. finely shredded lemon peel
½ tsp. salt
¼ tsp. caraway seeds
¼ tsp. ground black pepper
1 Bay leaf
1 Red or green pepper cut into bite-size strips
3 cups hot cooked egg noodles
Dairy sour cream

directions

(1) In a 4 quart slow cooker combine meat, carrots, onions and garlic. In a small bowl combine beef broth, tomato paste, paprika, lemon peel, salt, caraway seeds, black pepper and bay leaf. Stir into vegetable and meat mixture.

(2) Cover; cook on low heat setting for 8 to 9 hours or on high heat setting for 3½ to 4½ hours.

(3) Using low heat setting, turn to high heat setting. Steren sweet pepper strips. Cook and cover 30 minutes more. Discard bay leaf. Mix sour cream in with egg noodles. Serve on top of egg noodles.
