Great on Toast, veggies, or even just with a spoon

ingredients

1 1/2 cups roasted cashews
1/4 cup unsalted butter, softened
1/3 cup semisweet chocolate piece, melted
1 teaspoon instant coffee crystals, dissolved in 1 teaspoon warm water

directions

1 Place nuts in blender container or food processor bowl. Cover; blend or process until finely ground. Add half of the butter and half of the chocolate.
2 Cover and blend again. Add remaining chocolate and butter and the coffee mixture and blend about 3 minutes or until smooth.
3 To store, cover and chill up to 1 month. To serve, let stand at room temperature 1 hour. Makes about 1 cup. 1 tablespoon per serving.
4 For gift giving, layer this rich-tasting spread and additional whole cashews in a crock or pretty jar.
