Fruity Cake Bars

description

Made from a shortcake cookie recipe

ingredients

1/2 cup white sugar
2 cups all purpose flour
1/2 cup soft and/or melted butter
1/2 cup any jelly you like

directions

-Preheat oven to 350
-Mix flour, sugar & butter together in a large bowl.
-Add mixture to non-stick a square/rectangle cake pan (smaller works better, I use a 6x8)
-Flatten batter into pan.
-Take whatever jelly/jam/preserve you like and place a layer on top of the batter.
-Bake for 12-15 minutes depending on how crispy you like the outer part of the cake.
-Cut into bars and serve.
*You can also add chocolate chips or whatever else you like (nuts, candies, marshmellows, etc..)
Once I added chocolate chips and mint extract to the batter for a yummy mint chocolate cake. This is based off of a shortbread cookie recipe but it comes out way better as a cake or bars.

made this and added some chocolate from a bar of I had in the pantry for jam used sweet orange marmalade. It was yummy but batter is very crumbly.

Not bad for a simple recipe. Added another couple tablespoons of butter and just added 3 minutes to the bake time, perfect. Definitely not low cal but if you need something simple odds are you have this all on hand all the time.
