I always have these ingredients on hand, so it’s easy to throw together in the morning. This recipe turns out great with frozen or thawed chicken breasts. Either way, it’s delicious and healthy! (must be made in a large crock pot)
ingredients
- 2 boneless skinless chicken breasts
- 2 cans Ro-Tel (I like the lime and cilantro,but regular is fine)
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained,
- 1 can corn
- 1 onion, chopped
- 2 cans low sodium chicken broth
- 1-2 cups water
- 1 tbsp garlic powder
- 1 tbsp chili powder
- 1 tbsp ground cumin
- 1 tbsp dried cilantro
**Optional ingredients - Tortilla chips, sour cream, shredded cheddar or Mexican cheese blend**
directions
- Combine all ingredients in crock pot
- Cook on low for 7 - 8 hours
- Top with optional ingredients and enjoy!
