Bacon, Egg, and Cheese Hashbrown Bomb!

ingredients

1 large baked potato (russett or sweet)
1 Tbsp. butter
2 eggs
2 strips bacon, cooked and diced
2 Tbsp. shredded cheese
1 Tbsp. fresh parsley, chopped
salt and freshly ground black pepper

directions

Lay the baked potato on its side, and use a knife to carefully cut off the top third of the potato. With a spoon, hollow out the middle of the potato to make a “bowl, leaving the potato as thick or thin as would like. (Just remember, the more room you leave, the more room for eggs, bacon and cheese!)

Place 1/2 tablespoon of butter in the middle of each bowl. Then gently break an egg into each bowl, careful not to break the yolk. Top with bacon, cheese, parsley, and then season with salt and pepper.

Bake at 350 degrees F for 20-25 minutes, or until the egg whites are set. Serve immediately.

So to be clear, you have bake the potato first, then cook it again for 25 min at 350? Are we sure is already baked begin with?

To the person who posted question 10 times, about bacon. Read recipe ingredients! It clearly states 2 pieces of bacon, cooked and diced. So I would dice them first then cook them.

MY GOODNESS.. the very first ingredient is 1 large BAKED potato.. NOT baking.. or baker.. but LARGE POTATO... I am making these tonight for dinner.. taters are in oven now and getting ready to chop mix ins...

Instructions in recipe seem very simple and straight forward, maybe read!!..It says BAKED potato & COOKED CHOPPED, that means either chop it cook bacon, or bacon OR ^ OMG CRUMBLE it. Baking time is for EGG to set!

1 potato or 2? Ingredients call for potato, Tbsp butter and 2 eggs. But directions tell you to place 1/2 of & break an egg into "each bowl." Since the title is "Breakfast Potatoes," should we assume recipe calls potatoes?
