Enchiladas or Casserole

description

This can be made as a casserole to save time of putting the enchiladas together. Just layer it in a rectangle baking dish of your choice.

ingredients

1/2 to 1 pound lean hamburger or chicken breasts.
1 taco seasoning packet (brand of your choice)
1 small can green enchilada sauce
1 small can sliced olives.
1 can whole or chopped green chiles
1/2 small onion chopped
i cup shredded cheddar or cheese of your choice (you may want more to taste)
1 pint sour cream (you may want more to serve on top later)
1 package corn tortillas or flour if you prefer (at least 12)

directions

Brown the hamburger and drain any grease.If using chicken, cut it in very small pieces before browning it. Add the taco seasoning to the meat after browning adding the water per instructions.

While the meat is cooking, chop the onions, drain the chiles, and shred the cheese (unless like me, you buy the already-shredded). If using corn tortillas heat in small amount of oil but do not cook them hard. This is just to soften them. Many Latino cooks place a bit of enchilada sauce in the oil. Be careful if you try this method..it splashes. Flour tortillas can just be heated slightly before filling them or placing them in baking dish with a small amount of enchilada sauce when making casserole.

To make regular enchiladas:
Place some enchilada sauce in the bottom of baking dish THEN place about a TBLS of meat in each tortilla, some cheese, chiles, onions, and sour cream and some enchilada sauce. Roll and place each one in a baking dish. Top with enchilada sauce, sour cream, cheese, a few olives and heat until bubbly or about 30 minutes.

To make the casserole:
Place some enchilada sauce on the bottom of pan. Place a layer of tortillas, meat, cheese. chiles, onions, and sour cream.
Add another layer of tortillas and meat, etc if you have enough. If not just place a few tortillas on top. THEN place more sauce, sour cream. cheese, and chiles and a few olives sprinkled over all. Heat about 30 minutes possibly up to 45.
