Creamy Zucchini Noodles

You can mix in some regular pasta if you need to... but you don't :)

ingredients

4-5 medium zucchini, washed
1 tablespoon Olive Oil

Sauce:
1 1/2 tablespoons butter
2 tablespoons flour
1 cup low-fat milk, preferably at room temperature
1/4 cup grated or finely shredded parmesan cheese
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Additional parmesan cheese for garnish

Julienne the zucchini and set aside. (you can also use a cheese grater)

In a small saucepan, melt better over medium heat. Whisk in flour and cook for one minute. Slowly add 1/2 the milk and quickly stir to incorporate the flour mixture so no lumps form. Add the rest of the milk and stir constantly until the mixture thickens (about 5 minutes). Stir in cheese, garlic powder, salt and pepper. Once cheese has melted, remove sauce from heat.

In a medium pan, heat oil over medium. Add zucchini noodles and saute 2-3 minutes. Remove from heat and pour sauce over noodles, stir gently to coat. Serve immediately, garnish with Parmesan cheese if desired.
