a spicy shrimp dish

ingredients

8oz bacon
3 garlic cloves, sliced
3 med celery stalks, thinly sliced
3 red, yellow, and/or green peppers,thinly sliced
1 jumbo onion, thinly sliced
28oz tomatoes
8oz clam juice
2 tbsp lime juice
hot pepper sauce, to taste
cooked rice
1 lb shrimp

directions

1. in 12in skillet cook bacon over med heat until browned, stirring often. With slotted spoon transfer to med bowl.
2. To bacon fat in skillet, add garlic, celery, peppers, and onion; cook over med-high heat , uncovered, 10-15 mins until veggies are tender. Stir in can tomaotes and clam juice and bring to boil. Reduce heat and cook out the liquid, approx 30 mins.
3. Stir in shrimp and cook til they turn opaque throughout, approx 5 mins. Remove from heat and add lime juice and pepper sauce and bacon.
4. Serve over rice
