Jalapeno Stuffed Pork TenderLoin

INSANELY GOOD!

ingredients

1 pkg pork tenderloin (2 count)
Salt 
Pepper
Garlic Powder
8 oz cream cheese, room temperature
1 jalapeno pepper, seared, chopped
Bacon, thinly sliced
Extra Bacon Bits (optional)
1/2 packet Ranch Dip Mix

directions

  1. Preheat oven to 425F
  2. Slice jalapeno meat away from the seeds and membrane.  Discard seeds and membrane.  
  3. Sear meaty jalapeno strips in a pan with olive oil.   
  4. Remove pepper strips from heat and chop once they have cooled.  
  5. Season tenderloins with salt, pepper and garlic powder.  
  6. Using a very sharp knife make a slit (length-wise) down the center the tenderloins that goes about 3/4 of the way through the meat.  
  7. Mix chopped Jalapenos, Cream Cheese, Ranch Mix, and Bacon Bits then stuff into the opening.  
  8. Wrap bacon around leaving gaps of exposed pork and stuffing.  
  9. Place wrapped tenderloins on a baking pan making sure they are not touching so they have plenty of heat circulating around them.  
  10. Bake for 20 minutes without opening the oven.  
  11. After time is up leave oven sealed shut and let pork rest in hot oven for an additional 20 minutes.  It should be perfect. (course 60 minutes at 400 works too)
  12. Slice about 1/4" thick.
