Another one that you can make your perfect breakfast... bite size :)

ingredients

  • 15 oz. frozen shredded hash browns, thawed
  • 1 cup Cheddar cheese, shredded
  • 1 tablespoon olive oil (to help with the crispiness)
  • 8 medium eggs
  • Salt and pepper to taste
  • Cooked Bacon, Sausage, etc... (optional)
  • 1 tablespoon Cheddar cheese, shredded

If you don't have frozen shredded hash browns, bake 4-6 russet potatoes. Let them cool off, then peel and grate them to form shreds.

directions

  1. Mix hash browns, salt, pepper, olive oil and 1 cup Cheddar cheese in a mixing bowl
  2. Grease the muffin pan and divide hash brown mixture. Completely line muffin mold with potatoes, all the way to the rim because potatoes will shrink when cooked. The muffin mold should be almost completely full of potatoes.
  3. Press in the middle of the muffins to make the "nest", and spray the top with cooking spray.
  4. Bake at 375 F or until the edges have browned, about 15-20 minutes
  5. Crack an egg into each nest and season with salt and pepper to taste
  6. Top with crumbled bacon, sausage, cheddar, peppers, etc... (again... get creative)
  7. Bake at 350F until the egg whites set, about 13 to 16 minutes
