Flatten chicken in a ziplock bag
Flatten chicken breasts in a plastic bag before cooking - it will keep it from coming out dry on the edges and raw in the middle.
Just place it in a freezer bag and flatten it all to the same thickness. You do not have to buy a "fancy tool" - A couple of whacks with a small skillet will do the job
Couple advantages - you can add your seasonings (or marinade) to the bag and avoid messing up another dish, AND you get the bonus of tenderizing the chicken at the same time
