ingredients

3/4 lb cheddar cheese, grated
1/4 lb (one stick) butter
1 tsp dry mustard
2/3 cup dark or amber beer
1 tsp Worcestershire sauce
Pinch of white pepper
Pinch or two of cayenne pepper

directions

Place cheese, mustard and beer in bowl and press cheese down until it is covered by beer. Cover and let stand for one hour at room temperature.
Cream butter in food processor or mixer. Add cheese, beer mixture and all other ingredients. Season to taste with additional pepper or salt, if desired.
Pack into crocks or other bowls and refrigerate for up to two weeks. Serve at room temperature with crackers.
