Yep... you can do that!!

ingredients

  • 12 large eggs hard cooked eggs
  • 1 cup mayonnaise
  • 1/3 cup Dijon mustard
  • 1 Tablespoon paprika
  • 1/2 Tablespoon cayenne
  • Juice of 2 lemons
  • Kosher salt
  • Ground Black pepper
  • 2 eggs lightly whipped
  • 1 cup corn starch
  • 2 cups panko bread crumbs
  • Crumbled, cooked bacon or other garnish (optional)

directions

  1. Peel and slice eggs from top to bottom in half. Remove yolk and place whites to the side. Mash yolks, add the mayo, mustard, paprika, and cayenne. and blend well till smooth. Season with salt, pepper and lemon juice to taste. Place filling into pastry bag using a small hole tip. (or a ziplock bag with the corner cut off)
  2. First dip cooked egg whites in the corn starch and shake off any excess, then coat in whipped eggs. Next roll it in the panko bread crumbs, coating it well.
  3. Fry until the panko is golden brown. Place the cooked egg whites on a plate and fill with yolk filling.
  4. Garnish with crumbled, cooked bacon, or other garnish if desired.
