Same principal as the corn dogs... just corn :)

ingredients

Batter

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/3 cup white sugar
  • 4 teaspoons baking powder
  • 1 egg - beaten slightly
  • 1 cup milk
  • 1/4 cup corn starch (to help the batter stick)

The rest of the stuff

  • 3/4 gallon vegetable oil for frying
  • 6 ears of corn on the cob – left whole or cut in half horizontally
  • Wooden Skewers

 

directions

  1. Husk your corn, pull off threads, and cut ear in half (if preferred)
  2. In a medium bowl, combine cornmeal, flour, salt, pepper, sugar and baking powder.
  3. Stir together eggs and milk and add to the dry ingredients.  Mix well (batter should be a little lumpy)
  4. Preheat oil in a deep saucepan over medium heat. Insert wooden skewers into Corn. 
  5. Roll the Corn in cornstarch then in Batter until well coated
  6. Fry 2 or 3 ears at a time until lightly browned, about 3 minutes. Drain on paper towels.
