Just get the shredded stuff

ingredients

2 lbs shrimp
1 cup unsweetened shaved coconut
whites of 2 eggs
1 tbsp coconut oil (any oil works)
1 tsp chili powder

directions

Peel and de-vein the shrimp

Whisk the egg whites in a bowl and coat the shrimp.

In another bowl mix the shredded coconut and chili powder and roll the shrimp in the mix

Throw the shrimp into a frying pan over medium heat with coconut oil. Fry them for about 2 minutes on each side. Until Golden

If any of the coconut falls off just scoop it out and sprinkle it over the shrimp for toppings later :)
