Baked fish with tomato and onions

ingredients

Fish, tomatos, onions, olive oil, salt, pepper

directions

Preheat the oven to 180oC.
Slice 2 x medium sized onions into thin rings. Place in boiling water on a medium stove plate for a few minutes until the onion is soft.
Defrost 2-4 fish fillets (by room temperature or in the microwave).
Place the softened onion on the bottom of an over-proof dish.
Place the fish fillets on top of the onion.
Thickly slice 2 x medium sized onions and place slices on top of the fish.
Dribble 2-4 teaspoons of olive oil over (1 x tsp per fish fillet).
Add salt & pepper. Freshly ground salt & pepper work very well.
Cover the dish and bake for 30 minutes.
Serve with baby potatoes and a vegetable of your choice.

Actually looking for recipes that include shrimp - put in seafood since that's as close I could get. Concerned this recipe may cook the too long.
