ingredients

  • 1 lb ground beef, drain fat
  • 1 can corn
  • 1 15 oz can tomato sauce
  • 1 cup salsa
  • 1 pkg taco seasoning
  • 500 gr cottage cheese (1 cup)
  • 2 eggs
  • 1 tsp oregano
  • 6-8 soft tortilla shells
  • 1½ cups grated cheese ( I like mozzarella or marble)

directions

  1. Brown ground beef in a large frying pan, drain off fat
  2. Add corn, tomato sauce, salsa and taco seasoning and heat through
  3. In a small bowl beat eggs, add in cottage cheese and oregano
  4. Grease a 9 x 13 pan
  5. Place 3-4 tortilla shells on the bottom of the pan overlapping
  6. Cover with ½ of the meat mixture
  7. Top with all of the cottage cheese mixture
  8. Place 3-4 more tortilla shells overlapping on top
  9. Cover with the last of the meat mixture
  10. Top with grated cheese
  11. Bake at 350F for 1 hour
