Simple, tasty and fluffy banana bread! Great for a nice big loaf or mini loaves!

ingredients

1 1/2 Cup(s) - All Purpose Flour
1 Teaspoon - Baking Soda
1 Teaspoon - Cinnamon (Optional)
1/2 Teaspoon - Salt
1/2 Cup(s) - Sugar
1/2 Cup(s) - Brown Sugar
2 Eggs
3 Large Ripe Bananas, Mashed
1/4 Cup (Half a Stick) Butter, Melted

directions

1) Preheat the oven to 350 degrees. Grease a bread pan or 4 mini loaf pans.
2) In a bowl, whisk together flour, baking soda, cinnamon, salt, sugars. Add in eggs and melted butter. Stir.
3) Mix in the bananas and put into the pan.
4) Drop it on the counter a few times to get it evened out on the pan. (Optional)
5) Bake for 50-60 minutes, or the toothpick test comes out clean.
6) Take out of the oven, let it cool for around 30 minutes and enjoy!

Tips:
1) Don't over-bake the bread! It will become hardened and not as soft and moist as it should be.
2) Don't over do it with the mix! Don't use a hand mixer, mix it by hand.

Good luck! Happy baking! :D
