Nice way to use up that extra chicken and rice
ingredients
4 cups of rice, prepared
1/2 lb Chicken (cooked and chopped)
1 cup peas and carrots
1 small white onion (chopped)
2 cloves of garlic (minced)
2 Eggs
3 tablespoons of sesame oil (other oils work, but I STRONGLY suggest you use the sesame oil
1/4 cup soy sauce
directions
Prepare your rice and chicken.
Heat the sesame oil in a LARGE skillet on medium heat.
Add Onion, Garlic, Peas, and Carrots and "fry" them until the veggies are tender.
Crack the eggs into the skillet and scramble, mixing throughout the veggies.
Add the rice, chicken, and soy sauce to the skillet and MIX - this is where the large skillet comes in handy.
